Head Chef and front of house partner are required for this country pub located in a rural Essex village approx. 10 miles from Braintree, the long and well established pub has a great reputation with locals and tourists.
The Pub has built up a well-deserved reputation for using all fresh seasonal ingredients with everything including bread and ice-creams made in house. They operate an A la Carte and TDH menu and are open for lunch and dinner. The menu is full of tasty pub restaurant classics such as fillet steak, duck breast etc., with nearly half the main courses being fish, which has a good following.
The owners are looking to step back from the business over the next year and are looking for chef capable of running the kitchen and then gradually taking on more responsibility this will include embracing the current menu and adding a couple of your own dishes, the owner is happy for a gradual menu change but is not looking for somebody to completely change and re-write the menus.
The front of house role is a supervisory but hands on role assisting in all areas of the bar and restaurant with some knowledge of cellar work, organising and ordering stock for the bar, serving customers etc. The owners would be happy to show you their systems but feel that this wouldn’t be right for somebody with no previous experience, but would suit a couple who want to build something together.
You would be responsible for organising the kitchen ready for service, ordering, meeting with suppliers, achieving and maintaining GP, hygiene and H&S of kitchen eventually taking over the business. The owner is happy to cover your 2 days off per week and has suggested that he could cover Saturday and Sunday giving you the weekend off, but this is optional and he will happily discuss options and be as flexible as he can
The kitchen runs with 2 chefs; the 2nd chef has been at the restaurant for years and happily runs the starters and helps with desserts, fully capable of covering days off etc. but isn’t looking to become head chef.
This is a village pub restaurant though and not a fine dining restaurant so we are looking for somebody who enjoys cooking and presenting great ingredients simply whilst achieving maximum flavours.
There are 2 live in options available with this position either a large 1 bedroom property that easily splits into 3 bedrooms or there is ‘owner accommodation’ self-contained flat above the pub .
Customers have always been very generous with their tips so each member of staff gets an average of £150 – £180 tips per week (as a couple you would get £300 – £450 per week)
Base salary of £40,000 – £45,000

Meals on Duty
Equal share of tips of between £6,000 – £10,000 each (so a further £12,000 – £20,000)
